Buckwheat pancakes

Ingredients :

  • buckwheat flour (ground buckwheat) - 1 cup;
  • baking powder - 1 teaspoon;
  • almond milk - 1 glass;
  • almond paste - 1 tablespoon;
  • lemon juice - 1/2 tablespoon;
  • sweetener to taste.

Cooking method

Pour the washed green buckwheat into a blender and whisk well to make buckwheat flour. Use a sieve to remove large lumps.

Put flour in a large bowl and mix with baking powder. In another small bowl, combine milk, sweetener, lemon juice, and almond paste. Combine all the ingredients together. If the dough is too thick, add a little water.

Preheat the pan with a drop of vegetable oil. Fry pancakes on both sides in the same way as regular pancakes.

Buckwheat with kefir

Ingredients:

  • buckwheat - 100 g;
  • kefir.

How to prepare

If you are planning to eat this dish for breakfast, you should prepare it in the evening. Rinse the buckwheat and pour it into any container with a lid. For example, in a large glass. Pour kefir over the groats and mix well so that the liquid reaches the very bottom. Add a little more kefir on top of buckwheat (1-1.5 cm). Cover the contents with a lid and refrigerate overnight.

In the morning, take out the finished dish and serve on a plate. Breakfast can be varied with fresh fruit.

Buckwheat soup

Ingredients:

  • meat (any: beef, lamb, chicken, turkey) - 500 g;
  • buckwheat - 200 g;
  • potatoes - 500 g;
  • carrots - 200 g;
  • onions - 150 g;
  • garlic - 2-3 cloves;
  • vegetable oil;
  • greens, salt and perec to taste;
  • bay leaves - 3-4 pcs.

Cooking method

Cut the meat into small pieces and cover with water in a saucepan. Cook for an hour. At this time, chop the onion and grate the carrots on a coarse grater. Cut the potatoes into small cubes. Buckwheat should be calcined in a dry frying pan.

Fry the onion in vegetable oil and add carrots to it. Throw potatoes into the finished broth, salt and bring the liquid to a boil. Add buckwheat to it and cook for about 10 minutes. Add onions, carrots, bay leaves, salt, pepper and herbs to the broth. Bring to readiness, then add garlic passed through a garlic press to the soup. Let the dish sit under the lid for 15 minutes.

Baked buckwheat with vegetables

Ingredients:

  • buckwheat - half of the package;
  • zucchini - 2 pcs;
  • onion - 1 piece;
  • carrots - 1 pc;
  • bell pepper - 1 pc;
  • garlic - 1 clove;
  • tomato juice - 0.5 l;
  • water - 0.5 l;
  • herbs, salt, pepper and seasonings to taste.

Cooking method

Chop all vegetables and lay in layers in a baking dish. At the end, pour buckwheat into it and distribute evenly. Mix the tomato juice, water and salt in a container. Pour the resulting liquid over the vegetables and cereals. Cover the dish with foil and bake in the oven for about an hour at 180 degrees. Add some more water to the dish as needed while cooking.

Buckwheat cutlets

Ingredients:

  • buckwheat - 1/2 cup;
  • onion - 1 piece;
  • champignons - 7 pcs;
  • parsley - 1/2 bunch;
  • garlic - 1 clove;
  • 1/2 cup water;
  • salt, pepper and smoked paprika to taste.

Cooking Method

Chop the vegetables as you like. But it is most convenient to cut onions into cubes, and mushrooms into slices. First fry the onion until golden brown, then add mushrooms to it and keep on fire for about 5 minutes. Pour some water into the pan, add the garlic and simmer for another 5 minutes.

Put chopped parsley, boiled buckwheat and whatever you've fried in a blender. Add salt, pepper and smoked paprika to taste and beat until smooth. Be sure to shape the patties with wet hands, roll in flour or breadcrumbs and fry for about 5 minutes on both sides over medium heat.

Buckwheat like a merchant

Ingredients:

  • buckwheat - 200 g;
  • meat - about 200 g;
  • champignons - 3-4 pcs;
  • onion - 1 piece;
  • water - 350-400 ml;
  • vegetable oil;
  • salt and pepper to taste.

Cooking method

Chop meat and vegetables. Fry onions and add meat to it, and then spices and mushrooms. Put the pre-boiled buckwheat into the pan last, fill with water and cover the contents with a lid. Simmer until cooked.

Buckwheat carrot muffins

Ingredients:

  • carrots - 2 pcs;
  • buckwheat flour (chopped buckwheat) - 1 cup;
  • egg - 1 pc;
  • ground almonds - 1 cup;
  • almond milk - 1 glass;
  • chia seeds - 4 tablespoons;
  • baking powder - 2 teaspoons;
  • olive oil - 1/4 cup;
  • sweetener to taste.

Cooking method

In the same way as described in the first recipe, prepare buckwheat flour. Also whisk the almonds in a blender to make one glass of smooth paste. Combine flour, nuts, chia and baking powder in a bowl. Beat the egg in a separate bowl. Add butter, sweetener, milk, and carrots. Stir and pour into dry ingredients. Bake in the oven for 20-25 minutes at 180 degrees.

Sweet buckwheat

Ingredients:

  • buckwheat - 1 glass;
  • dried apricots - 1 handful;
  • ginger (can be in sugar) - 5-6 pieces;
  • jam of any taste - 1 tablespoon;
  • water;
  • cinnamon - 1 teaspoon;
  • butter.

Cooking method

Boil buckwheat in advance. Cut dried apricots into two parts. Grease a pan with butter and simmer dried apricots over low heat. Then add ginger to it and cook for about 5 minutes. Throw cinnamon into the pan, add jam and some water. Simmer all ingredients for 3-5 minutes. Finally, add buckwheat to them and warm it up together for a couple of minutes.
