Brownies with bacon, cherries and almonds

Anton Sadchikov, chef of Brave Goodies: Few people know that if you fry bacon and sprinkle it with sugar, it will become caramelly and delicious. The idea of ​​frying bacon and chocolate seemed crazy to me, but I thought that no one would die and did it. It turned out so tasty fat that I wanted to smear myself. From chocolate pies, I knew only brownie, I made it, with pieces of bacon inside, it turned out not very expressive, so cherries, nuts appeared in brownies, and the bacon itself lay on top of it all and not inside. Thus, it is smoothly squirt and caramelized in the oven, and the biscuit absorbs all the flavors and aromas.

butter (traditional) 90 g
sugar 100 g
egg 2 pcs
flour 100 g
soda 0.5 tsp
salt 1 tsp
chocolate 150 g
cherry 50 g
bacon c / c 70 g

1. In a water bath we heat butter and chocolate 200 g, whisk the egg with sugar in parallel, as soon as the chocolate mass cools slightly, add the beaten egg with a spatula.

2. Add sifted flour, baking soda, salt, mix at a slow speed. Put in a mold, decorate with cherries, almonds, bacon, and the remaining chocolate.

Wasabi cake with pistachios

Anton Sadchikov, chef of Brave Goodies: It all started with a dish that is very popular in Asia - wasabi shrimp. They are fried in a special way and served with wasabi sauce, condensed milk, lemon juice, and sometimes mayonnaise. This combination seemed to me insanely tasty and unusual, so when I came up with the menu, one of the first combinations that came to mind was thatthe most sauce. I thought, why not make a wasabi sponge cake and make condensed milk sauce for it. And it would be cool if it turned out green. And so it happened, as a consequence, I added poppy to the condensed milk, because I find the buns with poppy filling very tasty, and instead of the original peanuts, noble pistachios, necessarily fried with salt, came to the cake. They accentuate the flavor of the biscuit and match the color better.

sugar 150 g
egg 2 pcs
kefir 1% 180 ml
flour 75 g
soda 2 pcs
salt 2 tsp
wasabi 75 g

Anton Sadchikov, chef of Brave Goodies: I heard about beer cookies and decided to try beer cake, added a little cocoa for color, orange peel for flavor, raisins, so that there was something to chew. The cupcake turned out to be very dense and characteristic. All that remained was to come up with a decoration.

Everyone knows that Americans fry marshmallows over a fire and they taste very bright, smoked, and also look cool. I tried it - it came out fiery. One of my all-time favorite cupcakes now! '

Anton Sadchikov, chef of Brave Goodies: Everything is simple here, you had to cook red jam on March 8, and so that it was brave the first thing that came to mind was strawberry + chili. I'm just a fan of chili pepper and its combination with sweetness.

Anton Sadchikov, chef of Brave Goodies: I have long wanted to do something with horseradish. This is a Russian product that everyone understands, not bourgeois wasabi for you. How did he get into the eclair - recently we were working on a new menu and preparing an eclair with raspberry cream, although it seemed to me tasty, but rather simple. Then I remembered about the hell. Little did I believe that it would be delicious, but I found it interesting. I gave it to the guys, they said: dude, this is awesome, and I started to refine the taste and consistency. There were several more versions of sharpness, until I found the very optimal proportion.

2. We heat the chocolate with condensed milk, at the same time bring water + sugar + glucose syrup to a boil, remove, add squeezed gelatin, mix the mass into the chocolate, add a few drops of raspberry puree until the appropriate color.

3. Lubricate the eclairs with glaze, decorate with beet chips.
